When I am cooking dinner, it has to be easy and it has to be yummy! I also prefer to eat vegetarian – since I have been on a Healthy way of living, I have discovered that meat does not agree with my digestive system. I am not into cooking, but I cook dinner because our boys need to eat food that is high in nutrients/vitamins and low in colours/preservatives.

Easy Vegetarian Lasagna

One of my all time favorite dish to cook is Easy Vegetarian Lasagna. I usually make this dish at least once a week – in the colder winter months I make it twice a week. Our boys love it, and they are not even aware of how many vegetables they are eating! Last night we sat down to Easy Vegetarian Lasagna and I asked our boys what there favorite part of the dish was! I was surprised with the responses that I got….

  • I like the pasta sheets
  • I like the cheese
  • I like the tomato sauce (they think its all tomatoes with meat!)
  • I like all of it :)

How To Make Easy Vegetarian Lasagna

Lets Break Down The Recipe For Easy Vegetarian Lasagna

  1. Cut up two onions
  2. Use as much garlic as you like…in the winter months I use more garlic to help keep head colds away!
  3. Find as many veggies in the fridge as possible…I even sometimes use frozen veggies if I have run out of fresh veggies!
  4. Cut the veggies as small as you like, I grate the carrots and zucchini so that the veggies can cook faster
  5. Use the biggest frying pan you have – the bigger the more veggies you can include!
  6. Brown the onion, the shallots and the garlic
  7. Add mushrooms if you have them (last night I was out of mushrooms!)
  8. Then add all the vegeatables that you are including.
  9. Easy Vegetarian LasagnaStir around, adding the pasta sauce
  10. Add the tin of tomatoes
  11. Add salt/pepper and mixed herbs
  12. Then add sweet chilli sauce – it adds extra flavour
  13. If you like you can even add 1 tablespoon of brown sugar – it takes away the bitter taste of the pasta sauce!
  14. Stir and simmer for as long as you like. I like to cook the Easy Vegetarian Lasagna for about an hour before I put it together with the white sauce/pasta sheets
  15. Use Glueten free Pasta Sheets if required, or use everyday Lasagna Sheets!
  16. Make the white sauce to your taste – sometimes I add herbs and spices, salt and pepper….sometimes I even add Parmesan cheese to the white sauce!
  17. Layer the meat in the oven dish, followed by pasta sheets, white sauce and then continue with your layers until the pasta sheets are all used.
  18. Cover with tasty cheese and parmesan cheese – both grated
  19. Cook in the oven to the pasta sheets are soft
  20. Serve with garlic bread and salad!
  21. There is your Easy Vegetarian Lasagna – and it easily feeds our family of seven plus 2 – so this recipe will feed 9 people!
